Rice, Quinoa & Feta Salad

Cooking for one can sometimes be boring, but before you reach for the takeaway, why not try our five minute salad? It’s packed full of protein and superfoods, with yummy eggs, quinoa, and delish feta so it’s a much healthier dinner than your average takeaway. It’s also a fab office lunch, you can whip it together in your kitchenette and make all your work colleagues jealous!

The best thing about this meal? No waste… the microwave rice is perfectly portioned for one, as is the cubed feta, and you can even use the oil from marinating the feta as a dressing!

Rice, Quinoa & Feta Salad

Ingredients

1 x 125g SunRice Rice & Quinoa Cup

1 small handful spinach leaves

¼ bunch flat parsley, stems and leaves roughly chopped

¼ cup almonds, chopped

¼ cup dried cranberries

1 egg, boiled whole to liking, peeled and cut in half

1 cup raw vegetables of choice, grated

100g pack of Castello Feta cubes marinated with herbs and garlic

Juice and zest of half a lemon

Pinch of Maldon Sea Salt

Hoyts Freshly Cracked Pepper

Method

1. Prepare a large mixing bowl and add in spinach leaves, parsley, chopped almonds, raw vegetables, dried cranberries and juice and zest of half a lemon.

2. Open Castello feta and drain the flavoured oil into the same mixing bowl.

3. Microwave Rice & Quinoa cup for 40 secs, then add to salad bowl. Season to taste. Use hands to toss salad evenly.

4. Serve warm with egg halves on top and garnish with marinated feta cubes.
