Kitchari, Indian Fried Rice

Jonathan LOVES meat, so sometimes he needs to be coaxed into eating more vegetables… so we’ve got a quick and easy indian version of fried rice – it’s called “kitchari” and it’s full of bold spices, fragrant basmati rice, and it’s all made even better by cooking it in Lurpak butter. In fact, we think butter should be a staple in everyone’s fridge, it’s especially important to help add flavour in vegetarian cooking.

One of Kimberley and Jonathan’s children is gluten free, so rice is a perfect base to any dish because it’s naturally gluten free. We’re using the Sunrice family size pre-steamed Basmati rice, because it’s so quick and handy in the pantry. In fact, all the ingredients in this dish should live in your pantry or fridge as staples. You don’t have to microwave the rice, it’s pre cooked so it just needs to be warmed through in the pan.

Kitchari, Indian Fried Rice

Ingredients

• 1 x 400g can lentils, drained
• 1 Brown onion, sliced
• 2 clove garlic, crushed
• 1 inch ginger root, finely chopped
• 2 tablespoon Lurpak butter
• 1/2 tsp. Hoyts coriander powder
• 1/2 tsp. Hoyts cumin powder
• 1/2 tsp. Hoyts whole cumin seeds
• 1/2 tsp. Hoyts mustard seeds
• 1/2 tsp. Hoyts turmeric powder
• 120g baby spinach
• 450g pack Sunrice microwave basmati rice
• 1 lime

Method

1. In a saucepan, sauté the onion, garlic and ginger in 1 tbs butter until fragrant.
2.Add the cumin seeds and mustard seeds and saute until they start to pop. Add the other spices, and stir to release the flavours for about a minute.
3. Add drained lentils, stir through until warm and starting to break down. Add the family pack of Basmati rice to saucepan, along with the rest of the butter and stir until warmed through.
4. Add spinach leaves at the end and mix through, letting the heat of the rice/dal mix soften it.
5. Garnish with coriander and a squeeze of fresh lime juice
