Flourless Chocolate Beetroot Loaf

Ingredients

Lurpak unsalted butter, to grease tin
200g Callebaut 54% dark chocolate callets
250g raw beetroot
4 eggs
150g brown sugar
120g hazelnut meal
1 heaped tsp baking powder
1 Tbsp unsweetened cacao powder
Lurpak unsalted butter, to serve

Method

Pre-heat oven to 180. Line and grease a baking tin with Lurpak butter.

Peel beetroot and grate using the coarse grate setting of your Philips Food Processor. Place in a large mixing bowl.

Separate eggs, place whites in a clean large bowl and yolks in with the grated beetroot. Use the Philips Opti-Chop with whisk attachment to whip the egg whites until stiff peaks form.

Place Callebaut chocolate in another microwave proof bowl. Place on the microwave on high for 1 minute. Remove, stir, and return to the microwave for 20 second intervals, stiring each time, until melted.

Place melted chocolate, brown sugar, hazelnut meal, baking powder, and cacao powder into the beetroot bowl and mix thoroughly.

Next, use a rubber spatula to gently fold in the egg whites.

Gently place batter into the prepared tin and smooth out the top. Bake for 45 minutes, or until a skewer comes out clean.

Allow to cool before turning out and serving with lashings of Lurpak butter.
