Cauliflower Hummus with Zataar

We recently discovered cauliflower hummus, and it’s one of our favourite dishes. This recipe makes extra – because we know you’ll love it on toast and with carrot sticks the next day too.


Cauliflower Hummus with Zataar

Serves4 as an Entree

Cooked in30 Minutes



1 head cauliflower

olive oil, to toss

2 Tbsp tahini

juice of ½ lemon

1 tsp honey

1 Tbsp extra virgin olive oil

1 clove garlic

salt and pepper

To finish:
2 Tbsp extra virgin olive oil
2 Tbsp zataar


Preheat oven to 220C. Cut florets off cauliflower. Toss in olive oil and roast for about 20 minutes, or until golden and cooked through.

Place cooked cauliflower, tahini, lemon juice, garlic, honey and 1 Tbsp extra virgin olive oil in a blender with some seasoning. Blend until smooth. Allow to cool in the fridge.

Serve in a bowl, finished with more olive oil and a sprinkling of zataar.
