Marinated Skirt Steak with Mojo Sauce

A fast way to kick your steak up to the next level.  It’s all about the citrus and spice in the Mojo sauce!

 

Marinated Skirt Steak with Mojo Sauce

Ingredients

Skirt steak:
1.2 kg skirt steak

1 tbs dried oregano

2 tsp ground cumin

60ml olive oil

6 spring onions, thinly sliced

300ml dark beer

100ml Worcestershire sauce

Salt and pepper to taste

Mojo Sauce:
4 large jalapenos, grilled on the BBQ till black and blistered

3 spring onions, cleaned and grilled till slightly charred

½ bunch coriander, roots and stems cleaned

2 tbs red wine vinegar

2 tbs extra virgin olive oil

salt and pepper to taste

Grilled veg:
4 spring onions

1 bunch baby carrots, halved

2 zucchini, sliced thin

2 red onions, cut into rings

3 tbs olive oil

2 lemons halved

Salt and pepper to taste

Method

Marinade skirt steak in oregano, cumin, olive oil, spring onions, beer, Worcestershire over night in the fridge or for at least 3 hours.

For the mojo sauce, heat BBQ to a high heat and grill jalapenos and spring onions till charred. Remove stems and roots and place all mojo sauce ingredients into a blender and blend until a smooth sauce forms. Add in a little water if needed to loosen the sauce. Season to taste.

Pre heat grill to high. Next remove meat from fridge and clean, lightly drain meat from marinade and place on a very hot grill, seal each side of steak. Then reduce heat slightly. Cook steak turning every minute for about 12-18 minutes depending on size of steak and desired doneness. Lightly baste steak with remaining marinade throughout cooking. Once cooked remove from grill and allow to rest for at least 10 minutes.

Return grill to its highest heat, mix prepped veg with a little olive oil and seasoning. Grill until charred and just cooked through. Start with the carrots and work your way through with onions, spring onions, and zucchini last. Remove and place in a bowl and cover with cling film so that the veg continue to steam and cook through.

Grill lemon halves until caramelised.

Slice steak against the grain into think slices. Serve with grilled veg and a generous drizzle of mojo sauce and caramelised lemons. Serve hot.
