Rescue Overcooked Rice Hack

Overcooking rice is a pain, but we’ve got a great Hack so you can “rescue the rice” by making a delicious congee, or add it to ANY soup to make it more hearty. With just a few simple additions to your fridge and pantry, you have the perfect no waste meal.


Rescue Overcooked Rice Hack


Cooked in30 minutes



1 cup Sunrice long grain rice, cooked
with too much water - over boiled.
Drained quantity should be about 2.5

3 cups best quality chicken stock

1.5 inches ginger, finely grated

2 cloves garlic, crushed

2 Tbsp soy sauce

1 bunch asian greens, chopped into bite
sized pieces

To top:
250g leftover chicken or other meat,
sliced thinly

50g peanuts, roasted

4 spring onions, chopped


Drain rice of excess water.

Place back in the pot along with
chicken stock, grated ginger, crushed garlic and soy sauce.

Bring to the boil over medium heat, then blend slightly using
a stick blender to achieve a creamier texture.

Add chopped greens, and simmer for 1 minute until wilted.

Remove from heat, and serve topped with sliced chicken,
chopped spring onion and roasted peanuts
