Healthy Chicken Parma Hack

Pub food… tick! There is no better way to win a true blue aussie male’s heart than with a really good parmy. Only problem is, that it’s not always that healthy.  The schnitzel is deep fried, then covered with waaaaaaayyy too much cheese. In our healthier version of this pub classic, we use an air fryer and just a little spray oil to cook a crispy schnitty, and it’s covered with some really good basilico pasta sauce, and finally topped with parmesan. A little bit of strong flavoured cheese goes much further to make your meal delicious, compared to a tonne of flavourless light cheese. Cooking for 1 person has never been so delicious!

 

Healthy Chicken Parma Hack

Ingredients

1 x 200g chicken breast, beaten to 1.5cm thickness

20g (1 Tbsp) flour

Maldon Sea Salt

Hoyts cracked pepper

1 egg

65g (3Tbsp) Panko bread crumbs

Spray oil

3 Tbsp Barilla Basilico Sauce

2 Tbsp shredded parmesan cheese

Salad, to serve

Method

1. Set Philips AirFryer to 200c.

2. On a plate place the flour and season with salt and pepper

3. In a shallow bowl add cracked egg and whisk

4. On another plate place your Panko crumbs

5. Next dredge the chicken breast in flour then egg then Panko crumb. Repeat with rest of chicken.

6. Spray a light layer of oil on each side of the crumbed chicken and cook in air fryer for 10 minutes.

7. Remove from fryer, pour over Basilico Sauce, then top with parmesan cheese.

8. Return to air fryer and cook for a further 2 to 3 minutes, or until lightly browned on top.
