Healthier Veggie Chips

Healthier Veggie Chips

Ingredients

• 1 cup breadcrumbs
• ¼ cup finely grated parmesan
• ¼ cup extra virgin olive oil
• ½ cup plain flour
• 2 eggs, lightly beaten
• Maldon salt, to taste
• 400g veggies, such as zucchini, pumpkin, asparagus.

Method

1. Combine breadcrumbs, parmesan and oil in a shallow bowl and season to taste. Place the flour and eggs in separate shallow bowls. Whisk eggs lightly.
2. Cut veggies into finger length pieces, the shape of fries. Zucchini cooks quickly so cut them wider, and pumpkin cooks quickly so cut them more thinly (1cm thick).
3. Dip the zucchini first in the flour, then in the egg, then finally in the panko mixture, pressing to coat well.
4. Set Philips Air Fryer to 220c. Place chips in basket, in 1 layer, and cook for 8 minutes or until brown and crispy.
