Healthier Veggie Chips

Say YEAH if you love chips! Your inner child heart is screaming right now… but your adult head says “nooooooo it’s unhealthy”. What if you could have the best of both worlds? You can! Healthier and tasty chips.

Firstly, we are air frying veggies covered in crumb, so they are full of fibre and deliciousness. Secondly, we are air frying instead of deep frying… you get the same crunch but with up to 80% less fat. The Philips Air Fryer has turbostar technology which means the air circulates really well, ensuring you get evenly cooked crunchy veggie chips every time.

Kids will love these with ketchup, and why not try it for adults with a fancy sauce… maybe a saffron aioli?

Healthier Veggie Chips

Cooked in20 minutes

• 1 cup breadcrumbs
• ¼ cup finely grated parmesan
• ¼ cup extra virgin olive oil
• ½ cup plain flour
• 2 eggs, lightly beaten
• Maldon salt, to taste
• 400g veggies, such as zucchini, pumpkin, asparagus.

1. Combine breadcrumbs, parmesan and oil in a shallow bowl and season to taste. Place the flour and eggs in separate shallow bowls. Whisk eggs lightly.
2. Cut veggies into finger length pieces, the shape of fries. Zucchini cooks quickly so cut them wider, and pumpkin cooks quickly so cut them more thinly (1cm thick).
3. Dip the zucchini first in the flour, then in the egg, then finally in the panko mixture, pressing to coat well.
4. Set Philips Air Fryer to 220c. Place chips in basket, in 1 layer, and cook for 8 minutes or until brown and crispy.
